Super fast, super easy meals?
I love eating healthy, but most of my recipes take an hour to prepare. I'm way too tired after work to spend that kind of time making dinner, so I'm starting to slip into some bad habits. I need some easy and FAST healthy meal ideas. Got come? Thanks.

When I buy chicken breasts (or other meats) at the store I bring them home and split them into single or family portions.  I then put them in ziplock bags with different marinades.  I let them sit in the fridge for an hour or two and then stick them in the freezer for the week.
 
in the morning I will pull out a bag from the freezer and stick it in the fridge, it gives me chicken ready to cook when I get home from a long day at work.  Then I add some rice and veggies or a salad and I get a healthy portion controled meal.
 
I either grill my chicken on the barbque, bake for 20 min at 400 degrees, or quickly fry up in 5 minutes with a small amount of olive oil.

I'm preheating the grill as we speak and have too much chicken to throw on.
Wonderful idea, Dotcomworkin! Bet this will be my last time to cook more than I need.

We have the same situation. My solution is to cook  meals or do prep on the weekends. During the week it's just a quick reheat and we're eating in 10 minutes. My staples are a crock pot of chili, a pot of stew, omelets  and salads. All of them assemble or reheat in 10 minutes or less. Good luck!

I work at home and need fast meals I can throw together at the last minute when I finish working.  Since we also have health issues, I have found that salads are my favorite fast way to go.
Pre-made salad in bags with add my own grilled chicken, beef, ham, whatever. 
I do admit the kids get tired of them.
